White Chocolate and Midnight Minis Dipped Strawberries

Servings 15-20 strawberries
White Chocolate and Midnight Minis Dipped Strawberries
1 toothpick or kebab skewer
2 oz heavy cream
8 oz white chocolate baking chips
1/2 bag Midnight Mini Cookies
16 oz strawberries, washed and dried
  1. Place Midnight Mini Cookies in a bag. Crush with a rolling pin. Transfer the crushed pieces of Midnight Mini Cookies to a plate. 
  2. In a microwave safe bowl, cover and heat the heavy cream in the microwave for one minute on high. Then, add the white chocolate chips and stir. Replace the lid and microwave again on high for a minute and a half. Stir until all of the white chocolate has melted evenly. 
  3. Stick the kebab skewer through the top of the strawberry to make it easier to dip in the white chocolate ganache. Gently dip each strawberry into the warm white chocolate ganache and then into the crushed Midnight Mini Cookies. Repeat until all the strawberries have been covered. If the white chocolate ganache becomes stiff, cover and microwave in 15 seconds increments until you reach the desired consistency again. 
  4. Place the dipped strawberries onto a plate lined with parchment paper. Place into the fridge for a couple of hours. Remove from the fridge, plate and enjoy!
